2 cups spelt flour

1 tsp baking soda

½ tsp cinnamon

¾ tsp baking powder

¾ tsp salt

1/3 cup milk of choice

1½ tsp vanilla extract

½ cup agave nectar or maple syrup

1½ tbsp lemon juice

2 cups tightly packed mashed banana

2/3 cup chocolate or carob chips


1Preheat oven to 350F (180C). Grease a loaf pan.

2Combine dry ingredients and mix well.

3In a separate bowl combine wet ingredients. Mix the wet ingredients into the dry ingredients. Add the chocolate chips. Mix until just combined – don’t over-mix.

4Pour into the greased loaf pan and cook 35-50 minutes depending on how gooey you want it. If the top if cooked but the inside is still gooey put tin foil over the top and continue to cook.
