Gluten free, sugar free, egg free. Get a chocolate chew cookie fix without all the fat, sugar and empty calories.
3 large, very ripe bananas
½ cup peanut butter or almond butter (preferably all natural)
¼ cup canola or olive oil
1 tsp vanilla extract
2 cups old fashioned oats
1/3 cup shredded coconut (optional)
1 tsp baking powder
¼ tsp cinnamon
¼ tsp salt
½ to 1 cup chocolate chips
1Preheat oven to 350F (180C). Line a baking sheet with parchment paper or spray with non stick spray.
2In a large bowl mash the bananas with the peanut butter, oil and vanilla.
3In another bowl stir together oats, coconut (if using), baking powder, cinnamon and salt.
4Add the dry ingredients to the wet ingredients along with the chocolate chips and stir until combined.
5Drop spoonfuls of dough onto prepared sheets and bake for 12-14 minutes until just set.
