Carob Nut Balls

  • Yields: 24 balls


¼ cup ground almond

¼ cup very finely chopped walnuts

½ cup raisins

8 dried figs or dates, pits removed

¼ cup carob powder

2 tsp maple syrup

½ tsp vanilla extract

1/8 tsp ground cardamom

1 tsp minced fresh ginger (or use 1/8 tsp powdered)

pinch sea salt

2 tbsp water

carob powder or unsweetened shredded coconut for rolling


1Place almonds and walnuts in food processor with metal blade and pulse to chop.

2Add raisin, figs or dates, maple syrup, vanilla, cardamom, ginger and sea salt. Process until everything is evenly chopped.

3Add water a little at a time until mixture holds together.

4Roll into 1” balls. Roll the balls in shredded coconut or carob powder if desired.

5Keep balls refrigerated.
